Instructions
- If you’re using wooden skewers, soak in water for at least 30 minutes.
- Prepare the barbecue for cooking over direct high heat (250°C-290°C) and preheat as directed. See below for information on Premium Gas set up methods.
- Prepare the barbecue for cooking using direct high heat (250°C-290°C) and preheat as directed. Refer to Step 6 for information on Weber Q settings and set up methods.
- Prepare the charcoal barbecue for cooking using direct high heat (250°C-290°C). See below for information on how to set up a Weber Kettle.
- Prepare your barbecue for cooking using direct high heat (250°C-290°C). Refer to Step 6 for information on Weber Lumin settings and set up methods.
- Prepare your barbecue for cooking over direct high heat (250°C-290°C).
- Prepare the griddle for cooking using direct high heat (250°C-290°C) and preheat as directed. Refer to Step 6 for information on Weber Slate Griddle settings.
- In a bowl, combine the prawns with the marinade ingredients. Thread the prawns, chorizo, and lime onto the skewers.
- Once the barbecue has preheated, brush the cooking grills clean with a wire brush. Grill the prawn skewers over direct high heat, with the lid closed, for 4 minutes, flipping halfway through or until the prawns are opaque and cooked through.

- Once your barbecue has preheated to the set temperature (SmokeFire: 290°C+), brush the cooking grills clean with a wire brush. Grill the prawn skewers over direct high heat, with the lid closed, for 4 minutes, flipping halfway through, or until the prawns are opaque and cooked through.
- Once the griddle has preheated, scrape it clean with a scraper. If needed, add a small amount of vegetable oil to the griddle surface and spread it with the back of a spatula. Cook the prawn skewers over direct high heat, for 6 minutes, flipping halfway through, or until the prawns are opaque and cooked through.
- Serve immediately. Encourage your guests to hold the skewer upright and squeeze the lime so the juices run over the prawns and chorizo.
